Bucatini also known as perciatelli, is a thick spaghetti-like pasta with a hole running through the center. The name comes from Italian: buco, meaning “hole”, while bucato or its Neapolitan variant perciato means “pierced.”This pasta reminds me of my child-hood. We use to play and slurp when my Mama wasn’t watching and slurp sauce all over ourselves. I lost touch with it once I left home and many years later while at Piemonte’s Italian Delicatessen in the Tower District in Fresno I had a flashback and had to buy some to have fun!
